From the coauthor of The China Study and author of the New York Times bestselling follow-up, Whole Despite extensive research and overwhelming public information on nutrition and health science, we are more confused than ever—about the foods we eat, what good nutrition looks like, and what it can do for our health. In The Future of Nutrition, T. Colin Campbell cuts through the noise with an in-depth analysis of our historical relationship to the food we eat, the source of our present information overload, and what our current path means for the future—both for individual health and society as a whole. In these pages, Campbell takes on the institution of nutrition itself, unpacking: • Why the institutional emphasis on individual nutrients (instead of whole foods) as a means to explain nutrition has had catastrophic consequences • How our reverence for "high quality" animal protein has distorted our understanding of cholesterol, saturated fat, unsaturated fat, environmental carcinogens, and more • Why mainstream food and nutrient recommendations and public policy favor corporate interests over that of personal and planetary health • How we can ensure that public nutrition literacy can prevent and treat personal illness more effectively and economically The Future of Nutrition offers a fascinating deep-dive behind the curtain of the field of nutrition—with implications both for our health and for the practice of science itself.

'Journey over all the universe in a map, without the expense and fatigue of traveling, without suffering the inconveniences of heat, cold, hunger, and thirst.' --Miguel de Cervantes, in Don Quixote From the earliest of times, maps have fired our imaginations and helped us make sense of our world, from the global to the very local. Head of Map Collections at the British Library, Peter Barber has here compiled an historic and lavish atlas, charting the progress of civilization as our knowledge of the world expanded. Simply organized as a progression through time, The Map Book collects some 175 maps that span four millennia - from the famed prehistoric Bedolina (Italy) incision in rock from around 1500 B.C. to the most modern, digitally enhanced rendering. Many of the maos are beautiful works of art in their own right. From Europe to the Americas, Africa to Asia, north to south, there are maps of oceans and continents charted by heroic adventurers sailing into the unknown, as accounts spread of new discoveries, shadowy continents begin to appear n the margins of the world, often labeled 'unknown lands.' Other maps had a more practical use: some demarcated national boundaries or individual plots of land; military plans depicted enemy positions; propaganda treatises showed one country or faction at an advantage over others. So much history resides in each map--cultural, mythological, navigational--expressing the unlimited extent of human imagination. This is captured in the accompanying texts--mini essays by leading map historians--that are as vivid and insightful as the maps themselves. They make The Map Book as much a volume to be read as to be visually admired.

In 1835, there were 175 steam locomotives in service in the United States. By 1900, that number had increased to 37,663. In this newly revised and expanded edition of his classic work, the renowned railroad historian John H. White, Jr., chronicles the explosive growth and development of the steam locomotive in America - from the first British imports to the New York Elevated locomotives of the 1880s - and adds more than ninety new pages of superb illustrations and text. Beginning with the early era of locomotive design, White describes the background and methods of the first American builders, the special requirements of American railroads, construction materials, locomotive types, performance, and costs. He then turns to the development of individual components: boilers and running gears, headlights and cowcatchers, sandboxes, bells, and whistles. Throughout, remarkably detailed scale drawings - many reproduced from the original working drawings - illustrate design features and modifications.

H F W Taylor was for many years Professor of Inorganic Chemistry at he University of Aberdeen, Scotland. Since 1948, his main research interest has been the chemistry of cement. His early work laid the foundations of our understanding of the structure at the nanometre level of C-S-H, the principal product formed when cement is mixed with water, and the one mainly reponsible for its hardening. Subsequent studies took him into many additional aspects of the chemistry and materials science of cement and concrete. His work has been recognized by Fellowships and by other honours and awards from many scientific societies in the UK, USA and elsewhere. This second edition of Cement chemistry addresses the chemistry and materials science of the principal silicate and aluminate cements used in building and Civil engineering. Emphasis throughout is on the underlying science. The book deals more specifically with the chemistry of Portland cement manufacture and the nature of the resulting product, the processes that occur when this product is mixed with water, the nature of the hardened material, the chemistry of other types of hydraulic cement, and chemical and microstructural aspects of concrete, including processes that affect its durability. Since the first edition of this book was published in 1990, research throughout the world has greatly augmented our knowledge in all of hese areas. The present edition has been updated and revised to take account of these advances. The reader will acquire a solid understanding of the subject and will be better equipped to deal with the problems and pitfalls that can arise in engineering practice as a result of inadequate understanding of the relevant chemistry. It will serve both as an introduction to those entering the subject for the first time and as a guide to the latest developments for those already experienced in the field.
